Do you want to discover the art of Japanese noodles and learn how to make your own udon and soba from scratch? Have you always wanted to master traditional techniques to create fresh noodles that will elevate your homemade meals?
In this 3.5-hour workshop, you’ll make two iconic Japanese noodle varieties: udon and soba. You’ll discover what makes each one unique—and you’ll quickly realize that your feet will play a much bigger role than your biceps!
You’ll experience the famous foot-kneading technique, a traditional Japanese method that gives udon their signature texture. To develop the gluten network with minimal effort and achieve the perfect consistency, the dough will be sealed inside an airtight bag before being kneaded with your feet.
Next, you’ll shape soba noodles using a pasta roller and cut them by hand, following traditional techniques.
You’ll also prepare a classic tsuyu dipping sauce for serving cold soba, as well as an orange sauce to coat the udon after cooking.
By the end of the workshop, you’ll have all the knowledge you need to recreate handmade Japanese noodles at home and impress your friends and family with udon and soba made entirely from scratch.
All equipment and ingredients are provided. No experience is required—everyone is welcome! Just bring a few food containers to take your noodles home.
