Want to step out of your kitchen and discover where your ingredients really come from? Looking for inspiration to cook with fresh, local, and seasonal products while supporting passionate artisans from your neighbourhood?
During this full-day training, made up of two 3-hour sessions (with a 45-minute lunch break in between), Clément will take you on a journey through Jean-Talon Market!
We’ll start with a market stroll to hand-pick the best seasonal ingredients while meeting and chatting with the local producers who bring them to life.
Back in the kitchen, we’ll prepare a refined, entirely seasonal menu: a creative asparagus dish paired with Quebec cheese, and depending on availability, crab or lobster. We’ll also explore Gaspesian halibut, served with a shellfish juice, fiddleheads or fresh peas, and seaweed-based condiments.
Using pans, knives and plenty of cooking techniques, we’ll learn how to perfectly cook fish, prepare a rich juice, and balance textures and flavours with the best seasonal vegetables.
The menu may vary slightly depending on what’s available at the market.
The price includes all necessary materials, kitchen equipment, ingredients, and loads of pro tips.
No experience required!
This workshop is open to anyone curious and hungry to discover the richness of their local markets.
Visit at the market is approximately 3 hours. A lunch break of 1 hour, including getting back to Les Affutés location, separates the practical cooking part of the workshop.
The workshop is from 2pm to 5pm, and then from 6pm to 9pm.
N.B. : Don’t forget to bring your own containers to take home the delicious dishes you’ll create. Participants will be invited to taste their creations at the end of the workshop, but no meals will be served during the workshop. Please plan to eat before the workshop or bring a snack with you!
