The Fishmonger’s Course is designed to help you master all the techniques involved in cooking fish, and become completely autonomous in your day-to-day work.
In 3 sessions, we’ll discover how to cook different types of fish in a variety of ways, and master essential recipes and related techniques (knives, sauces, marinades, etc.)
– Day 1: Recognizing the freshness of a fish, gutting, scaling and boning fish, spinning fish, preparing a fumet and mastering cooking – – –
-Day 2: The different types of fish, cutting techniques, spinning your fish next, which types of knives to use, seasonings and marinades –
-Day 3: Working on raw and cooking techniques, frying, en papillote or with a torch, rolling your sushi, knife skills
Skills required: none! This course is open to all!
The price includes all necessary materials, kitchen equipment and guaranteed fresh fish!
Note: remember to bring your containers so you can leave with the products you’ve made.
