In this 3.5-hour workshop, offered during the fall, Isabeau invites you to rediscover the seasonality of local vegetables. Come explore the full potential of squash through a creative approach that emphasizes versatile, seasonally inspired techniques. You’ll build confidence as you create a variety of recipes to craft a zero-waste, squash-focused menu—from appetizer to dessert.
With carved squash, you’ll prepare an Italian-inspired antipasto and a tangy marinade to preserve your squash creations for festive occasions. With roasted seeds, you’ll make your own spice blend to elevate your dishes and enrich your pantry. Finally, with squash purée, you’ll prepare fluffy gnocchi and a sweet surprise dessert.
No experience required! All fall-flavor enthusiasts are welcome.

– Please bring a lunch box. Containers for the antipasto will be provided.
– Participants will be invited to taste their creations at the end of the workshop, but no meals will be served during the workshop. Please plan to eat before the workshop or bring a snack with you!
