Do you want to know how to sharpen your knives yourself? Do you want to feel the satisfaction of slicing a tomato with a freshly sharpened blade?

This 3 hour workshop, led by Erik, knife and sharpening enthusiast, will allow you to acquire all the necessary skills to practice at home and give your knives an exceptional sharp edge.

We will cover different sharpening techniques such as:

– How to give the right angle to the blade on a stone,
– How to get the right movement and pressure,
– Why and how to create a morfil and how to make it disappear,
– When to change the stone and how to maintain it,
– How to polish your blade.

The practice will be framed by theoretical explanations: you will learn more about the types of steel and the types of stone. You will learn to recognize what a carbon knife is compared to a stainless steel knife. You will also understand why some blades are more difficult to sharpen than others.

Skill requirements: none, this workshop is ideal for beginners.

You can bring 2 to 3 knives of different types and 1 to 2 pairs of scissors.

The price includes all the tools needed to practice and a mountain of good advice.

Chouette, j’ai des tomates et oignons à couper ! Des belles tranches bien fines et régulières, mes couteaux n’ont jamais aussi bien coupé. Ce cours est un incontournable pour tous ceux qui cuisinent un peu, beaucoup ou passionnément. Erik, le prof hyper sympathique, partage généreusement sa passion avec une pointe d’humour. Vivement le cours 2!

J’ai apprécié d’avoir appris à affuter moi-même mes couteaux. J’ai aussi réalisé avec joie que c’était plus simple que je pensais! Je cuisine souvent et cela fait des années que mes couteaux sont émoussés. Je ne trouvais pas de commerce qui offrait l’aiguisage de couteaux ou bien cela semblait compliqué. Alors la solution était claire: apprendre moi-même à le faire! Non seulement mes couteaux seront mieux affutés à l’avenir, mais je pourrai le faire moi-même sans attendre après personne! Et qui sait, peut-être qu’avec le temps et la pratique, je pourrai aider quelques personnes autour de moi avec ce que j’aurai appris!

Le formateur connait très bien son sujet et est sans le moindre doute un passionné.

Il y a une bonne balance entre la partie théorique et pratique. Il a pris le temps de s’assurer de l’assimilation de la technique pour chacun des participants (même on était plusieurs). À la fin de la partie pratique, il a refait une démonstration afin qu’on intègre le maximum d’information. Également, il a fourni des notes (sur son site web).

I attended this knife sharpening workshop on stone recently, and I was truly impressed by the instructor’s expertise and guidance. The instructor’s instructions were incredibly detailed and well-pronounced, making it easy for beginners like myself to grasp the intricacies of knife sharpening on stone. They skillfully broke down a complex process into manageable steps, which was greatly appreciated. I would like to extend my heartfelt thanks for their patient and informative teaching approach. It made a potentially daunting skill much more approachable.

J’ai récemment assisté à cet atelier d’affûtage de couteaux sur pierre, et j’ai été vraiment impressionné par l’expertise et les conseils de l’instructeur. Les instructions de l’instructeur étaient incroyablement détaillées et bien prononcées, ce qui a facilité la compréhension des subtilités de l’affûtage de couteaux sur pierre, même pour les débutants comme moi. Ils ont habilement décomposé un processus complexe en étapes gérables, ce qui a été grandement apprécié. J’aimerais exprimer mes sincères remerciements pour leur approche d’enseignement patiente et instructive. Cela a rendu une compétence potentiellement intimidante beaucoup plus accessible.
