Cooking course – Conservation and zero waste

– This course aims to provide practical techniques for taking a sustainable approach to cooking, maximizing the use of food and reducing waste. Throughout the course, you’ll learn natural preservation methods, transforming leftovers into products, and zero-waste practices to optimize your everyday cooking.

– Taking 4 sessions of 3 hours, we’ll discover effective methods for extending the shelf life of food. These techniques include lacto-fermentation, canning, drying and canning, which help preserve fruits, vegetables and herbs while maintaining their taste and nutrients.

 

Day 1: Flavor extraction and preservation techniques, cooking techniques, food reduction, use of pectin

Day 2: Salting and brining techniques, creating an anaerobic environment, use of bacteria, fermentation techniques, food preservation and flavor balance
Day 3: Ingredient cutting techniques, anti-waste and preservation techniques, cooking and learning about temperatures, preserving flavors and nutrients
Day 4: Preservation techniques, mastering different types of brine, canning methods, sterilization, filling and sealing jars

Skills required: none! This workshop is open to all.

The price includes all necessary materials, kitchen equipment and raw materials.

Note: remember to bring your own containers so you can take home the products you’ve made.
